I wish I had this a long time ago.

I first heard of Schiele in an interview with Peter Chung (see:Aeon Flux). He shows his influence from friend Gustav Klimt but I like Schiele a lot more.

It's been about three years since I read it and a lot of the concepts he describes still fascinate me.

I read this a little bit after I started working sautée at the Bonefish Grill. While my experience wasn't quite as extreme as the stories he tells, I could relate to a lot of it. Very entertaining and eye opening for anyone not familiar with what goes on in a kitchen.
